Tinolang Manok (Chicken Tinola) Recipe

Tinolang Manok (Chicken Tinola) is a very healthy and delicious traditional Filipino dish which can be traced way back in the Spanish colonial period. This dish is a very common entrée in  Filipino dining. It is composed of chicken, sayote, chili leaves and spices, sautéed and boiled until tender.

This classic Filipino dish is very easy to cook. Simply start by preparing the ingredients, then sauteeing ginger, onions, garlic, chicken and sayote. Add rice wash water, boil and simmer it until the chicken and sayote are tender. Lastly, adding chili leaves right before the dish cooks.

HOW TO COOK Tinolang Manok Recipe - Chicken Tinola (Hindi Manok na May Tubig)

     Start cooking Tinolang Manok by heating a pot and drizzle in cooking oil. Once oil is hot, sauté ginger. Then, add  in onions and garlic. Once onions are translucent, add in the chicken cuts. Season with fish sauce and black pepper. Continue to stir fry for a few more minutes. Add in sayote slices and stir fry a bit.

     Pour in rice wash water and mix. Bring to a boil and simmer for 15 minutes. Drop in beef cubes and mix well. Continue to cook until sayote slices are tender. Sprinkle with a pinch of salt and a dash of black pepper to taste. Mix for a while then add in chili leaves and cook for a while longer.

     Remove from heat and transfer to a serving bowl, serve and enjoy.

What chicken parts to use?

In this recipe we used assorted chicken cuts. It is up to your preference on what part of chicken you like to use.

What is rice wash water?

Rice wash water is the water you from washing rice before cooking it. We used it because it tends to have a better taste result in the tinola recipe.

Tips on Cooking this recipe

  • For more tastier tinola, use dark meat cuts of chicken. They tend to add a much stronger chicken flavor to the dish.
  • Green papaya can be used as sayote substitute.
  • Make sure to wash ingredients before using especially the chili leaves because they tend to have dirt and some insect stains.

Ingredients

  • 500 grams Chicken sliced
  • 1 piece Ginger 3 thumbs size
  • 1 piece Onion sliced
  • 3 cloves Garlic chopped
  • 1 bunch Chili Leaves
  • 3 cups Rice Wash Water
  • 1 piece Chicken Cubes
  • 2-3 tbsp Cooking Oil
  • 1-2 tbsp Fish Sauce
