Fish and Chips Recipe *Filipino Style*

Firstly, peel 4 large potatoes and cut them into your desired size. Prepare ice-cold water in a bowl, add ¼ cup of corn syrup, and stir. Soak the potatoes in the bowl of ice-cold water for 20 minutes. Pat dry the potatoes on a flat surface and transfer them to a bowl. Add ¼ cup of cornstarch, coating the potatoes evenly.

In a pot, heat cooking oil for deep frying. Fry the potatoes, remove them from the pot, and set aside. In a separate bowl, add 1 cup of all-purpose flour, 1 tsp of baking powder, 1 tsp of salt, 1 tsp of black pepper, ½ tsp of paprika, and ½ tsp of garlic powder. Mix well, then add 1 egg and ¾ cup of milk. Set the mixture aside.

Next, place 530 grams of fish fillet on a cutting board and cut it into the desired size. Coat the fish fillet with the prepared mixture and deep fry it. After removing the fish fillet from the pot, deep fry the potatoes for the second time. Drain both the fish and the chips, place them on a plate, and enjoy!

Can I use a different type of fish for this Filipino Fish and Chips recipe?

Certainly! You’re welcome to pick any fish you like for this recipe. Whether you prefer cream dory, tilapia, or haddock, go ahead and select the fish that suits your taste best. Just stick to the easy coating and frying steps, and you’ll end up with a mouthwateringly delicious dish tailored to your liking.

Is there a specific dipping sauce recommended for this dish?

While tartar sauce is a popular dipping option for fish and chips, you can also use local Filipino sauces like vinegar with garlic, or even banana ketchup for a unique twist.

Can I bake Fish and Chips instead of frying?

Absolutely, you have the option to use your oven for a healthier twist. Begin by preheating your oven to approximately 425°F (220°C). Lay out the fish fillets and coated potatoes on a baking sheet, then bake them until they reach a delightful golden brown. While the crispiness might not match that achieved through deep-frying, this approach offers a healthier alternative without compromising the fantastic flavor of your dish.
