First of all, prepare all the ingredients needed and then next in a large mixing bowl, combine rice flour, baking powder, sugar, salt, and mix until well-combined. Afterwards add coconut milk, vegetable oil, melted butter, egg and mix until well-combined. Then add the cheese and mix and set aside. Toast your banana leaves and put them in the molder. After that pour the batter into the molder and add sliced salted egg then bake the bibingka for 20-25 minutes at 180°C. After the bibingka is freshly cooked brush with star margarine for better taste.

Is it possible to create bibingka without a clay pot or banana leaves?

Indeed, bibingka can still be made without clay pots or banana leaves. If you have access to them, you can line a standard baking pan or cupcake molds with banana leaves or parchment paper. Some people also use aluminum foil or a greased pan if they don’t have banana leaves.

How long may bibingka be stored in the refrigerator?

Bibingka can be kept in the fridge for up to 3 to 4 days in an airtight container or wrapped in plastic wrap. It is crucial to note, however, that the texture and flavor of the bibingka may alter after it has been chilled for a lengthy period of time. We recommend consuming the Bibingka immediately so you can enjoy the fresh flavors.
