SHRIMP TEMPURA RECIPE (Ebi Tempura)

Shrimp Ebi Tempura is a delectable shrimp dish coated in batter and then deep fried in oil.  It’s origins was traced back in the 16th century by a Portuguese missionary in Nagasaki. Though it is known to be a typical Japanese dish, the word tempura actually originated from the Latin phrase “quatuor anni tempora” which means the “Ember Days” in which, no meat was eaten.

Cooking this very tasty Japanese dish is very simple. Starting with just coating the shelled and deveined shrimp in flour and batter and then deep frying it in oil.

HOW TO COOK SHRIMP TEMPURA RECIPE (Crispy Fried Ebi Tempura)

     In cooking shrimp tempura, first dredge the shelled and deveined shrimp in flour. Set aside unused flour. Then, beat the egg in a bowl. Add ½ cup water and all purpose flour and cornstarch and mix well. Add another ½ cup water, season with salt and add baking powder and mix.

     Next, heat pan with cooking oil for frying. Once again, dredge the shrimp in the flour and coat it with batter before dropping them in the oil. Deep fry until light golden brown in color. Remove from heat and drain for excess oil. Transfer in a plate serve and enjoy.

What size of shrimp to use?

Medium sized shrimp were used in making this recipe. You could use larger size of shrimp if desired.

Why use cold water instead of water in room temperature?

Cold water is used because it tends to make the batter lighter.

Tips on Cooking this recipe

  • When frying in batches, make sure to scoop and remove the loose bits of batter in the oil before putting on the next batch. If you leave them, it may burn and give a bad taste in the oil. 
  • Do not over mix the batter, it may cause a soft and dough like texture when fried.

Ingredients

  • 10-12 pcs shrimp shelled and deveined
  • 1 cup cold water
  • ice cubes
  • 1 cup All-purpose flour
  • 1/2 cup cornstarch
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 pc egg

Instructions

  • Dredge shelled and deveined shrimp in 1/2 cup of flour. Set aside unused flour.
  • Beat egg in a bowl.
  • Add ½ cup water and 1/2 cup all purpose flour and cornstarch.
  • Mix well then add 1/2 cup water with ice cubes.
  • Season with salt and add baking powder, mix.
  • Heat pan with cooking oil for frying.
  • Dredge the shrimp again in the flour and coat it with batter before dropping them in oil.
  • Deep fry until shrimps get a light golden brown color.
  • Remove from heat and drain for excess oil.
  • Plate, serve and enjoy.
