HOW TO COOK Pork menudo

In a bowl season pork with liquid seasoning and dash of black pepper then mix until well combined then marinate for 10-30 minutes. In another bowl season pork liver with liquid seasoning, calamansi juice and dash of black pepper then mix and marinate for 10-30 minutes. In a preheated pan put some oil and cook carrots and potatoes until slightly light brown then set aside. Remove the excess oil in the skillet and fry the marinated pork liver then set aside. Using the same skillet put some oil if needed then add garlic and onion then sauté, after that add the marinated pork then sauté until pork is slightly brown then add the tomato sauce then sauté until well combined then add water and bay leaves then simmer for 30 minutes or until pork is tender. When the pork is tender add hotdog, black pepper and pork cubes then simmer for 4-5 minutes. Lastly, add the pork liver, carrots, raisins, potatoes and add some sugar and black pepper.

Can I use beef instead of pork in Pork Menudo?

Pork is the usual ingredient in pork menudo, but if you like, beef can be used instead. You might need to cook beef for a little longer to get it tender because it can be a little bit tougher than pork. Additionally, you can try with various beef cuts, such beef stew meat, to find which ones suit your palate the most.

  • 600 grams Pork
  • 250 grams Pork Liver
  • 1 pc Potato
  • 1 pc Carrots
  • 1 pc Green Bell Pepper
  • 2 & 1/2 cups Water
  • 4 pcs Hotdog
  • 1/4 cup Raisins
  • 1 pc Red Onion
  • 4 cloves Garlic
  • 4 pcs Calamansi
  • 2 pcs Bay Leaves
  • 2 tbsp Sugar
  • 200 grams Tomato Sauce
  • Black pepper
  • 3 tbsp Liquid Seasoning

  • In a bowl season pork with liquid seasoning and dash of black pepper then mix until well combined then marinate for 10-30 minutes.
