Place 5-8 crab sticks in a bowl and add hot water, soaking them while preparing other ingredients. Julienne 1 carrot, remove the skin and seeds from 1 cucumber, and slice open a ripe mango. Use a glass to remove mango from its peel, slicing it into Julienne and cubes. Cut 1 white onion then etrieve the soaked crab sticks and shred them. 

 

In a bowl, combine 1/2 cup of Kewpie, 1 tsp sesame oil, 1 tsp lemon juice, 1 tsp honey, and a dash of black pepper; mix until well combined. Add an additional 1 tsp of honey and another dash of black pepper, then mix again. On a plate, layer lettuce and add carrots, cucumber, onion, shredded crab sticks, whole corn kernels, and mango. Top it off with the mayo dressing. Enjoy your delicious Mango Kani Salad!

Can I use imitation crab sticks for this Mango Kani Salad recipe

Absolutely! We in fact used Imitation crab sticks on this recipe and it worked perfectly for this recipe. Simply soak them in hot water as directed, and they’ll contribute their delightful flavor and texture to the salad. You can also skip the soaking in hot water but we prefer to do it.

Instructions

  • Place 5-8 pieces of crab sticks in a bowl and add hot water.

  • Slice 1 piece of carrot in Julienne.
  • Remove the skin and seeds of 1 piece cucumber and cut in Julienne.
  • Slice open 1 piece of mango (ripe).
  • Use a glass to remove the mango from its peel and slice in Julienne and cubes.
  • Cut 1 piece of onion (white).
  • Get the crab sticks you soaked earlier and shred it.
  • In a bowl, add 1/2 cup of kewpie (mayonnaise), 1 tsp of sesame oil, 1 tsp of lemon juice, 1 tsp of honey, and a dash of black pepper.
  • Mix until well combined.
  • Add 1 tsp of honey and a dash of black pepper and mix again.
  • In a plate, place your lettuce.
  • Add the carrots, cucumber, onion, shredded crab sticks, corn (whole corn kernel), and mango.
  • Add mayonnaise dressing on top.
