HOW TO make Atcharang Papaya Recipe (Pickled Papaya)

Prepare the 1.144 gram shred green papaya, then mix with the 1/2 cup rock salt. Squeeze and mix until it gets watery. Squeeze and wring out the water, rinse well. Using a strainer, strain the papaya then drain using the cloth. Prepare the 4 & ½ cups of Vinegar, add 2 cups of sugar then stir, cover and bring to a boil. Stir in 1 medium ginger, 4 cloves garlic, 1 tablespoon peppercorn, 100 grams raisins, 112 grams pineapple chunks, and simmer for 3 minutes. After that add 3-4 turmeric (powder) optional, simmer for 4 minutes. Turn off the heat and add 1 sliced bell pepper and 1 sliced carrot and stir. Add the Squeezed and Drained Papaya, then add 1 piece of chopped onion and put in a jar.

How long does it last?

If it is only for family consumption only this will last longer than 2 months, place it in the refrigerator. However, if you want to go into business and sell this Atchara, there is a formal canning procedure on the internet that you should look into.

  • 1.3 kilograms Papaya (Green)
  • 1 pc Carrots
  • 1/2 cup Rock Salt
  • 1 Piece pc Bell Pepper (Red) (Red)
  • 1 pc Ginger
  • 1 pc Onion
  • 4 & 1/2 cups Vinegar
  • 112 grams Pineapple Chunks
  • 1 tbsp Peppercorn
  • 100 grams Raisins
