do we need to press the tofu after draining it with water?

Not necessarily but still, it is better to be pressed if you want a much crispier tofu result.

where can we buy tofu?

Tofu can be bought both in groceries and supermarkets as well as in local public markets.

can we use toho?

Definitely yes. However, it is less firm than the firm tofu, but still you can use toho.

cooking tips:

  • If desired, you can srinkle with calamansi juice and mix it to contrast the rich creaminess of the dish.
  • Tofu is added in the last part of cooking the dish to maintain its crispiness. Better served hot to enjoy the crisp.
  • You can also use butter in sautéing for a more rich flavor.
  • Use the firm tofu variant and not the silky soft one.
