This is a very popular dish in the Philippines. It is being sold in the streets where they call it Palamig or Sago that is very affordable to all people. Most street vendors are selling this Sago’t gulaman together with other street foods such as kikiam, fishball and many more. You are wrong if you think that this is only being sold in the streets for a cheap price. Gulaman Juice is also being served in fine dining Filipino themed restaurants at a higher cost. 

Gulaman juice is basically dissolved brown sugar in cold water served with lots of ice and gulaman or tapioca peals. This refreshment is perfect during summer time when the sun is very hot.

Ingredients

  • 1/4 cup Brown Sugar For Gulaman cubes
  • 3 cups Water For Gulaman cubes
  • 1 tsp Vanilla Extract
  • 3 cups Sugar
  • 3 cups Water
  • Sago
  • Crushed ice

Instructions

  • For the gulaman cubes, in a deep pan boil 3 cups of water gradually add the gelatin.
  • Stir thoroughly until the gelatin is evenly dissolve in the water.
  • Add 1/4 cup of brown sugar then continue stirring.
  • Once done filter the gelatin while transferring in a clean container. Let it cool aside.
  • For the gulaman juice combine 3 cups of sugar and 3 cups of water into the saucepan. Mix it until it is evenly blended.
  • Add 1 tsp of vanilla extract and let it simmer for a while.
  • Cut the cooled gelatin into cubes.
  • In a glass, put the white pearl, crushed ice, and the gulaman cubes respectively.
  • Pour the gulaman juice into the glass.
  • Serve as refreshment. Enjoy!
