Prepare 2.5 kg of pork belly and slightly cut pork belly meat (vertical & horizontally).
Add salt, black pepper, garlic powder, chili powder, and sugar to taste.
Rub the seasoning all over the meat.
Sprinkle again with salt and black pepper.
Add 1 bulb of garlic (minced), 1 piece of white onion, 1 piece ginger, 1 piece of bell pepper, 6 stalks of scallions, and 5 stalks of lemongrass.
Roll the pork belly.
Tie the pork belly.
Preheat the oven.
Bake for 2 hours in 180 C.
Turn pork belly to cook evenly as needed.
Brush the belly with oil and soy sauce for every 30 minutes.
Bake for another 1 ½ hour in 200 C.
Remove the pork belly tie and serve.
