LUNCHEON MEAT FRIED RICE

Ingredients

  • 4 cups leftover rice
  • 1 can luncheon meat 350g
  • 200 grams mixed vegetables
  • 3 cloves garlic chopped
  • 1 pc onion chopped
  • 3 pcs eggs
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • salt
  • black pepper
  • cooking oil

Instructions

  • Break eggs in a small bowl, add a pinch of salt and whisk.
  • Heat a pan and drizzle with cooking oil.
  • Pour the beaten eggs and season with a dash of black pepper.
  • Stir the eggs until its cooked. Remove from heat and set aside.
  • Remove meat loaf from can and cut it into small cubes.
  • Using the same pan, stir fry the luncheon meat and drizzle a bit of cooking oil for frying.
  • Once luncheon meat is cooked, remove from heat and set aside.
  • Sauté garlic and then add onions.
  • Once garlic is golden brown, add in left over rice and stir fry.
  • Add in the mixed vegetables and mix.
  • Season with soy sauce and ½ tbsp oyster sauce.
  • Mix and stir fry.
  • Add another ½ tbsp oyster sauce and then mix.
  • Put in the cooked luncheon meat and scrambled egg then mix.
  • Season with a dash of black pepper. Continue to stir fry for a minute or two.
  • Remove from heat, plate and serve.
