Buko pandan also called young coconut salad is a Filipino fruit salad dessert made from strips of fresh young coconut, sweetened milk, cream, and other various ingredients. One of the most popular Filipino desserts served during celebrations and fiestas.

Ingredients

  • 1 pack all-purpose cream
  • 1/4 cup sugar
  • 5 cups water
  • 172.20 grams young coconut meat
  • 1 can condensed milk
  • 1 sachet Jelly powder

Instructions

  • Boil 5 cups of water in a deep pan. Pour 1 pack of pandan flavored gelatin or jelly.
  • Stir until the powder is fully diluted in the boiling water.
  • Add 1/4 cup of sugar, let it boil for a while. 
  • Pour the gelatin into a strainer to separate the solid chunks of gelatin. Set aside the gelatin, let it cool down until it turns into a solid form. 
  • Prepare the milk mixture, start by pouring 1 pack of all-purpose cream in a bowl, whisk to soften the texture of the cream.
  • Add 1 can of condensed milk mix it with the cream. 
  • Slice the gelatin into cubes. Add the strips of coconut meat to the gelatin cubes. Also, add the milk mixture. Mix to blend all the ingredients.
