Peel sweet potatoes / kamote.
Slice sweet potatoes / kamote into 2-3 inch sticks.
In a large bowl, mix flour, sugar, salt, egg and half cup evaporated milk.
Gradually add the remaining evaporated milk while mixing.
Add in sweet potatoes / kamote.
In a pan, heat oil for deep frying.
Scoop in 1 ½ tablespoon of sweet potato / kamote mixture into the oil.
Scoop in sets of mixture into the oil but do not overcrowd the pan.
Deep fry fritters / maruya for 8-10 minutes or until it turns golden brown.
Drain for excess oil.
Repeat frying procedure for the rest of the mixture.
Transfer to a plate and sprinkle with sugar on top if preferred.
Serve and enjoy.
