A typical tempura sauce is usually made with dashi (stock), shoyu (soy sauce) and a part of mirin, a Japanese sweet rice wine. In this sauce recipe, we didn’t use mirin but still achieved the sweet savory signature taste of a classic tempura sauce.
Cooking tempura sauce with no mirin is very simple and easy. Just simmer the ingredients together in a pan, then transfer to a ramekin and serve.

Start cooking this delicious tempura sauce by starting with pouring water, soy sauce and white sugar in a sauce pan. Bring to a boil and let it simmer. Add ginger and radish, stir to mix. Remove the pan from heat. Transfer sauce to a sauce cup, serve and enjoy.
Tips on Cooking this recipe
You can use honey as substitute to sugar.
If thicker sauce is desired, you can add a water -cornstarch mixture while it is simmering.
