HOW TO COOK Roasted Chicken Recipe - Noche Buena / Christmas Recipe
Rub 1 whole chicken with salt and black pepper. Then, place 1 bulb of garlic, 1 piece onion, and 1 stem of lemon grass in the chicken. Next, in a bowl, add ¼ cup of melted butter, 2 tbsp of olive oil, ½ tsp of oregano, ½ tsp of thyme, ½ tsp of black pepper, ½ tsp of garlic powder, and 2 tbsp of parsley then mix until well combined. In the same mixture, squeeze 1 piece of lemon then stir. Slice 2 pieces of potatoes. Then, brush chicken with the marinade and add potatoes on the side. Brush again with the chicken marinade. Tie the chicken legs. Preheat the oven. Then, bake the chicken for 1 hour at 200c. Brush with the marinade after 1 hour of baking (do it for every 15-30 minutes until cooked). Bake for another 1 hour at 180c. Turn or rotate the chicken to cook evenly. After that, it is ready to serve.
Can I substitute fresh herbs with dried herbs in the marinade?
Yes, you can use dried herbs as a substitute, but keep in mind that dried herbs are more concentrated in flavor. Use about one-third of the amount of dried herbs compared to fresh herbs called for in the recipe.
