PORK CHOP STEAK / Bistek Tagalog

Pork chop steak is a savory pork dish cooked in the same manner as cooking Bistek or beef steak, less the beef. It is a very flavorful and satisfying dish yet very simple and easy to cook.

Pork chop steak is always misled to be the same with pork adobo because of the way it looks and the manner it is cooked. However, the dissimilarity is that in pork chop steak, we use calamansi juice instead of vinegar and omit the garlic which makes the difference in taste.

HOW TO COOK PORK CHOP ALA BISTEK

     First, marinate porkchops with soy sauce, sugar, salt and black pepper in a bowl. Squeeze in calamansi juice and strain the seeds. Marinate for atleast 4 hrs.

     After marinating, heat a pan and drizzle with cooking oil. Pan fry 2 to 3 porkchops for 5 to 7 minutes. Remove from heat. Pan fry the remaining pieces of pork chop for 5 to 7minutes. Add in the previously cooked porkchops.

     Next, pour in the marinate and add water. Bring to a boil. Simmer until meat is tender  while flipping the chops from time to time. Add in onion rings and simmer for another 7 minutes. Remove from heat, plate and serve.

Can we use white onions for the onion rings?

Yes, however, we recommend using red onions for they have a stronger flavor and takes on a more bistek-like taste.

Aside from pork chops, can we use other cuts of pork?

Yes, you can use cuts like kasim or pigue as to your liking, but in this recipe, we preferred to use pork chops for its even cuts and nice fat.

Tips on Cooking this recipe

  • Give the meat a nice sear when pan frying, it will lock in the meats’ moisture.
  • You can use lemon or lime juice as substitute to calamansi juice.

Ingredients

  • 5 pcs pork chop
  • 7 tbsp soy sauce
  • 3 tbsp cooking oil
  • 1 1/2 cup water
  • 1 tbsp sugar
  • 1 pc red onion sliced
  • 2 pcs red onion sliced in rings
  • salt
  • black pepper
  • 5 pcs calamansi

Instructions
