Pat dry 480 grams of salmon fish with a paper towel. Then, season the salmon generously with salt. Add a dash of ground black pepper and season with rosemary (whole). In a pan, add 1-2 tbsp of olive oil (depends on salmon). Start in high heat, so the skin will be crispy. Add the salmon. Press/hold salmon using a spatula for 15-20 secs so that fish doesn’t curl up. Adjust to low heat once fish is steady/stiff to cook evenly. Cook for 4-5 minutes each side. After that, set the salmon aside. In a pot, add 1 tbsp of olive oil. Then, add 3 cloves garlic (minced). Add 70 grams of butter and stir to melt the butter. Add 1/2 of lemon zest and squeeze 1 piece of lemon juice (whole). Stir the mixture. Season with black pepper and salt. Mix until well combined. Place the salmon in a plate and add the buttered lemon garlic sauce. Sprinkle with parsley (garnish).
