What size of shrimp and crabs to use?

We use medium  sized shrimp. Though we could use larger size of shrimp, it is more difficult to toss and longer to cook. However, you can also used smaller size of shrimp also if that is convenient for you.

What can we use if we don't have Annatto Seed?

If you can’t find it, combining equal parts sweet paprika and turmeric as a one-to-one substitute for ground annatto is your best bet. Turmeric adds a yellow-orange color to your dish as well as a nutty, earthy flavor, while paprika adds a red color and spicy sweetness.
