The Philippines is one of the top exporters of bananas. There are four main types of bananas grown widely in the Philippines such as Lacatan, Latundan, Bungulan, and the small Saba or Cardaba variety.
In this recipe, saba was used to make Maruya a type of fritter from the Philippines. Prepared by coating fanned bananas with batter, deep-fried, and sprinkled with white sugar.

How to cook Maruya
Peel 6 pieces of banana (saba) You can use banana that is somehow over ripe so it will taste sweet. Place in a large bowl and mash the peeled banana using a mortar (or you can use the bottom part of a drinking glass). Add 1 cup of all-purpose flour, 1 piece of egg, 1/2 sugar, 1 cup of water, and 1 teaspoon of baking powder. Mix to blend all the ingredients well.
In a frying pan, heat enough amount of cooking oil for deep frying. Scoop a portion of the banana mixture. Deep fry until it turns golden brown in color.
Sprinkle some white sugar on the top. Serve for merienda!

Ingredients
- 6 pcs ripe banana saba
- 1 cup all-purpose cream
- 1 pc egg
- 1 tsp baking powder
- 1/2 cup sugar
- 1 cup water
- cooking oil
- white sugar for dusting
Instructions
- Peel 6 pieces of banana (saba).
