Kamote Fritters - (Sweet potato recipe)

Maruya is a very common merienda recipe in the Philippines. This recipe, Kamote Fritters (Sweet potato recipe) gives a twist to our well loved merienda by using sweet potatoes instead of banana. Truly a very tasty treat to enjoy.

This merienda recipe is very simple to make. Just slice the sweet potatoes, mix it in the batter and deep fry it in oil.

HOW TO cook SWEET POTATO FRITTERS ( Kamote Maruya Recipes )

     Making Sweet Potato Fritters is very easy. Start by peeling the sweet potatoes / kamote then slice them into 2-3 inch sticks. Next, in a large bowl, mix flour, sugar, salt, egg and half cup evaporated milk. Gradually add the remaining evaporated milk while mixing. Mix in sweet potatoes / kamote.

     To cook, heat oil for deep frying in a pan. Scoop in 1 ½ tablespoon of kamote mixture into the oil. Scoop in sets of mixture into the oil but do not overcrowd the pan. Deep fry fritters / maruya for 8-10 minutes or until it turns golden brown. Remove them from heat and drain for excess oil. Repeat frying procedure for the rest of the mixture.

     In serving, arrange fritters on a plate and sprinkle with sugar on top if desired. Enjoy!

can we use any variant of sweet potato?

Yes, you could any of the common types of sweet potatoes such as jewel sweet potatoes, garnet yams, purple stokes, hannah yams and japanese yams.

Tips on Cooking this recipe

  • Soak sliced sweet potatoes in water while slicing up the other ones or before making the batter so that they won’t have brown/black spots.
  • You can add more sugar or honey in the batter if you prefer a sweeter taste.

Ingredients

  • 1/2 kg Sweet potato/ Kamote
  • 1 cup All purpose flour
  • 1 cup Evaporated milk
  • 1 pc Egg
  • 2 tbsp Sugar
  • 1/8 tsp Salt
  • Cooking oil for deep frying
