How To Make Palitaw (Easy Steps and Procedure) Sweet Rice Cake with Coconut

Palitaw is a small round and flat sweet rice cake coated with shredded coconut and topped with roasted sesame seeds and sugar. This soft and chewy dish is a famous traditional Filipino treat is usually enjoyed  as a merienda or dessert.

This recipe is so simple to make, just mix glutinous rice flour with water, form it into balls, flatten it, poach in water and coat with a mix of shredded coconut, sugar and toasted sesame seeds.

HOW TO COOK Palitaw (Easy Steps and Procedure) Sweet Rice Cake with Coconut

     Start making palitaw by pouring Glutinous rice flour in a large mixing bowl. Then, gradually add water while mixing. Next, knead the dough. Scoop a portion of the dough and roll into a ball. Then, flatten the ball dough. Repeat procedure until all the mixture are used.

     To cook the palitaw, boil water in a pot. Drop the dough into the boiling water. Let it cook until the palitaw floats. Place in a plate then set aside.

     Toast sesame seeds by continuous stirring it in a pan.  

     On a plate mix shredded coconut, white sugar and the toasted sesame seeds. Mix until all ingredients are blended well.  Coat the dough with the coconut mixture. Transfer on a serving plate and enjoy.

can we use regular flour instead?

No, it must be glutinous rice flour.

Glutinous rice flour can be bought in supermarkets, groceries and in the dry section of local public markets.

Tips on Cooking this recipe

  • Make uniform sizes of palitaw so that they will cook evenly.
  • Coat the poached palitaw with shredded coconut while they are still hot or warm. The coconut will stick to the palitaw better if it is still warm.
  • You can either dust your hands with rice flour or wet them to avoid the batter from sticking onto your hands while making the balls.
  • If desired or preferred, you can coat the palitaw with shredded coconuts and put the sugar and sesame seeds mixture in a bowl on the side.

Ingredients

  • 1 1/2 Cup Glutinous Rice Flour
  • 3/4 Cup Water
  • 1/2 Cup Shredded Coconut
  • 1/3 Cup Sugar
  • 1/8 Cup Sesame seeds
  • Water

Instructions

  • Pour 1 and 1/2 cup of Glutinous rice flour in a large mixing bowl.
  • Gradually add 3/4 cup of water while mixing.
  • Knead the dough.
  • Scoop a portion of the dough and roll into a ball. Flatten the ball dough.
  • Repeat procedure 4 until all the mixture are used
  • Boil 1 liter of water.
  • Drop the dough into the boiling water.
  • Let it cook until it floats. Place in a plate then set aside.
  • In a pan toast 1/8 cup of sesame seeds by continuous stirring.  
  • In a plate mix 1/2 cup of shredded coconut, 1/3 cup of  white sugar and the toasted sesame seeds. Mix until all ingredients are blended well. 
  • Coat the dough with the coconut mixture.
  • Transfer on a serving plate. Enjoy!
