Another easy egg recipe, Eggplant Omelette with cheese is a savory dish composed of precooked eggplant drenched in season egg, topped with sauteed vegetables and cheese. A hearty, healthy and budget friendly dish that is very simple to make.

How To Cook Eggplant Omelette With Cheese Recipe ( Easy Egg Recipes )

     In cooking Eggplant omelette, first break in eggs in a bowl. Add a pinch of salt, a dash of Black pepper and some Magic Sarap seasoning to taste. Whisk to beat eggs and mix seasonings.

     Next, cook the eggplants by frying them in oil. Once eggplants are cooked, remove them from pan and set aside. Sauté onions and tomatoes in the same pan and then set aside. Press the cooked eggplants to flatten it. Dip the flattened eggplant to the egg mixture.

     Heat the pan again and place the coated eggplant. Place a portion of the sauteed onions and tomatoes above the eggplant. Top with cheese and some of the egg mixture on top. Flip the eggplant to cook the other side. Once cooked, remove from pan. Repeat cooking procedure for the rest of the eggplants. Transfer to a plate and serve. Bon appetit!

can ordinary processed cheese be used?

Ordinary cheese can be used but we haven’t tried and check if it will melt well like the cheddar/mozzarella or quickmelt cheese; thus it may have a different end result.

  • Adding cheese is optional, however, it adds up to the creaminess and savory flavor of the dish.
  • You can also add ground meat on the toppings, just sauté them with the onions and tomatoes.

Ingredients

  • 4 pcs Eggplant
  • 4 pcs Egg
  • 3 pcs Tomatoes sliced
  • 1-2 pcs Onion sliced
  • Salt
  • Black Pepper
  • Cooking Oil
  • Magic Sarap optional
  • Cheddar and Mozzarella cheese / Quickmelt optional

Instructions

  1. Dissolve 2 sachets of 3 in 1 Instant Coffee Mix in a 1/2 cup of warm water.
  2. Add 1/2 cup of cold water in the coffee mixture then shake vigorously to mix it well.
  3. In a cup of your choice put 3 Tbsp of precooked Tapioca pearls.
  4. Fill the cup halfway full with the coffee mixture then add 3 to 5 pieces of Ice cubes.
  5. Serve and Enjoy!
