LUMPIANG GULAY RECIPE ( Lumpiang Togue / Vegetable Lumpia )

Lumpiang Gulay or also known as vegetable spring roll is a famous Filipino merienda or appetizer item which consists of stir fried mixed vegetables wrapped in a lumpia wrapper and deep fried in cooking oil. It comes in many variants where the most common is Lumpiang togue wherein togue or bean sprouts is the main ingredient.

HOW TO COOK EASY LUMPIANG GULAY RECIPE ( Lumpiang Togue / Vegetable Lumpia )

     To start, first cook the filling by heating a pan and drizzle with cooking oil. Once oil is hot enough, sauté garlic then add onions. Put in the ground pork and stir fry until juice from ground pork dries out. Season with a pinch of salt and a dash of black pepper and mix well. Add in the carrots, sayote and baguio beans and continue to stir fry. Season with sugar. Add in bean sprouts and continue to stir frym then mix in oyster sauce. Stir in the cabbage and continue to stir fry. Remove from heat at let cool.

     To assemble the lumpia, on a flat surface, lay a piece of lumpia wrapper. Scoop 2 tablespoons of the filling and line it on the mid bottom tip part of the wrapper. Roll the filling in the wrapper to make around 1 ½ inch thick logs. Brush water to the top tip of the wrapper to seal the lumpia. Repeat procedure for the remaining filling.

     Now, let’s cook the lumpia. Heat pan and pour enough cooking oil for deep frying. Once oil is hot, put in wrapped lumpia. Deep fry until lumpia has a golden brown color. Remove from pan and drain for excess oil. Transfer to a plate and serve.

For vegetarians, what can we use to substitute the pork?

You can omit the pork ingredient and replace it with tofu or if you prefer seafood or poultry, shrimp or ground chicken will do. However, if you want it made out of pure vegetables but want a meaty flavor, you can use pork or beef cubes flavoring instead.

Where can we buy togue or bean sprouts?

Togue can be bought in the vegetable section in public wet and dry markets. You can also find it in groceries and supermarkets, but usually they are frozen in these stores.

Tips on Cooking this recipe

  • In cooking the vegetable filling, do not overcook the vegetables. Lumpiang gulay is best when there’s still crunchiness in the vegetables.
  • Allow the filling to cool first before rolling them in the wrapper. If you roll them hot, steam from it may ruin and damp the wrapper.
  • Make sure to use fresh vegetables, especially the togue/bean sprouts.

Ingredients

  • 320 grams ground pork
  • 1 pc red onion sliced

  • 2 cups cabbage sliced
  • salt

  • lumpia wrapper
  • cooking oil for deep frying

Instructions

  • Once oil is hot, drop in wrapped lumpia.
  • Deep fry until lumpia has a golden brown color.
  • Remove from pan, drain for excess oil.
  • Plate and serve.
