HOW TO COOK CHICKEN FILLET ALA KING ( How To Cook Chicken Fillet and Ala King Sauce )

     To make Chicken Fillet Ala king, first, we have to prepare the chicken. Fillet the chicken breast. Cover it with plastic or cling wrap and pound/tenderize and flatten the meat.  Slice meat into desired serving sizes. In a container, combine chicken, fish sauce, and garlic powder, a dash of black pepper, cornstarch and egg.  Mix thoroughly until well combined. Marinate for 15 minutes.

     Next step is to coat and fry the chicken. After marinating, pour in all purpose flour on a plate. Dredge marinated chicken into the flour until it is fully coated. Deep fry chicken for 7 to 8 minutes or until it turns golden brown. Remove from pan and drain for excess oil. Set aside. 

     For the sauce, heat saucepan and melt in butter. Add in carrots and all purpose flour, mix well. Pour in water, stir and bring into a boil. Mix in and dissolve chicken cube. Pour in all purpose cream, mix well and bring to a boil. Add a dash of black pepper and a pinch of salt to taste. Simmer for 2 minutes then add parsley. Continue simmer and stir until you get the desired consistency of the sauce. Remove from heat and pour into fried chicken fillets. Serve and enjoy.

Can I use breading mixes from groceries for coating the chicken?

Yes, you could use breading mixes, however, most breading mixes are already spiced and seasoned that may affect the taste of the fillet.

What else can I use to coat the chicken aside from flour?

Regular bread crumbs and Panko can be used to coat the chicken. But we preferred to use flour because its end result is the most similar to the one from McDonalds which is the inspiration for coming up with the dish. Still, the choice of preference is up to your taste.

Tips on Cooking this recipe

  • To have a much crunchier mouth feel on your chicken, let it rest for a couple of minutes after dredging it from flour. Fry the chicken once the flour coating forms gooey like appearance. However, make sure that the coating from both sides of the chicken is still full and didn’t stick on the plate where you let it rest.
  • You can add up sliced mushrooms and frozen peas in the sauce ingredients if you want to have a more original ala king recipe feel.

Ingredients

  • 520 grams Chicken breast
  • 1/2 cup All Purpose Flour (for the breading)
  • 1/4 tsp Garlic Powder
  • 3 tbsp Cornstarch
  • 2 tbsp Fish sauce

  • 2 tbsp All Purpose Flour (for the sauce)
  • 1/4 cup All Purpose Cream
  • 2 tbsp Carrots (chopped)
  • 1/2 tbsp Parsley (chopped)
  • 50 grams Butter
  • 1 cup Water
  • 1/2 pc Chicken cube
  • Salt

Instructions

  • Fillet chicken breast.
