We simply need 2 cups glutinous rice flour, 1 cup coconut milk, 1 cup desiccated coconut, and 1 cup brown sugar sticks/skewers to make this recipe. With the exception of yeast, this is similar to bitso bitso. Both of them resemble Filipino donuts. Make this one for your family and friends!

After preparing all of the essential ingredients, combine the 2 cups glutinous rice flour and 1 cup desiccated coconut, followed by the coconut milk. Mix it all together, then gradually add the coconut milk, scoop it out, and roll it into a ball. After that, deep fry it until somewhat light brown, but before frying it will be helpful that you will be stitching in the center so it doesn’t bubble out when fried. For our Carioca balls, we used the oil to caramelize sugar. We added one cup brown sugar to the oil and then coated the carioca balls with sugar. After you’ve coated all of your carioca, take the sticks and skewer the Carioca Balls.
What is the accurate temperature while cooking this carioca balls?
During frying, keep the temperature between 350 and 375 degrees Fahrenheit. If the temperature is too low, the rice balls will absorb more grease. If you cook the rice balls too hot, they will brown on the outside before they are fully cooked on the inside, which could cause them to burst.
Should i fry it all together or by batches?
Make sure the pan isn’t too full. Fry in batches as needed to keep the oil temperature from dropping too low and to allow the balls to move around freely. When the dough is done, it will float to the top. To keep them from collapsing, cook them a little longer until lightly browned.
Tips on Cooking this recipe
- For best results use fresh ingredients specially coconut milk
- Deep-frying oils with a high smoke point, such as peanut oil, canola oil, and etc should be used in frying.
- To prevent the dough balls from “exploding” and splattering hot oil, “hole” them with the bamboo stick before deep-frying.
