Beef Morcon - Filipino Christmas Recipe

Firstly, flatten 1 kg of beef. In a bowl, add ½ cup of soy sauce, ¼ cup of pineapple juice, a pinch of salt, a dash of black pepper, and a pinch of garlic powder then mix well. Then marinate the flattened beef for at least 1 hour. After marinating, add a total of 4 boiled eggs and 4 pieces of hotdogs, 4 cheese sticks, 4 sticks of pickles, and 4 sticks of carrots for the entire kilogram of beef. After adding these on the beef, roll the beef and fillings to the edge. Then tie it with yarn. In a pot, add 2 tbsp of cooking oil followed by 3 cloves of garlic and 1 piece of onion then stir to cook. Next, add the marinade, 2 cups of water, 2 pieces of beef cubes, 200 grams of tomato sauce, ¼ cup of pineapple juice, 2 tbsp of sugar (optional), ¼ cup of cheese, salt as needed, and a dash of black pepper. Mix and bring to a boil. Then, add the tied beef and let simmer for 45-60 minutes. After that, remove the Morcon and let it cool. Continue to boil the sauce until it thickens. In a separate bowl, add ½ cup of flour. Coat Morcon with flour. In a pan, add cooking oil for cooking. Fry the Morcon until crisp.

How long should I marinate the beef before rolling it with the other ingredients?

Marinate the beef for at least 1 to 2 hours. Longer marination enhances the flavor, but avoid going beyond 24 hours as the texture of the beef might change.

Spicy Shrimp and Crabs

Ingredients

  • 480 grams Crab
  • 1/4 kg Shrimp
  • 1 pc whole corn
  • 50 grams butter / margarine
  • 3 cups water
  • cooking oil
  • 1 bulb garlic minced
  • 1 pc onion minced
  • 1 tsp chili powder
  • 1 tbsp sugar
  • 1/3 cup catsup
  • salt
  • black pepper
  • spring onion chopped (optional)

Instructions

  • In a saucepan, pour in water, add salt and crabs. Arrange the crabs so that all ofthem are soaked in the water. Bring to a boil. Continue boiling the crabs for15 minutes and remove the foamy bubbles formed during boiling.
  • Add corn and boil for 15 minutes more while stirring occasionally.
  • Remove crabs. Set aside. Let the corn boil until it’s soft and cooked.
  • Once the corn is cooked, remove it and set aside.
  • In another pan, drizzle an ample amount of cooking oil for sautéing. Add butter/margarine.
  • Stir the butter until it melts completely
  • Add garlic and stir. Once the garlic is golden brown, add in the onion. Stir.
  • Add catsup and mix well.
  • Bring the sauce into a boil. Add sugar and chili powder, stir.
  • Add the shrimp while continuously stirring. Simmer in low heat until shrimp is cooked. Add salt and black pepper to taste. Let it simmer for another minute.
  • In a bowl, place half of the crabs and pour in half of the shrimp and sauce. Mix well so that the crabs are covered in sauce.
  • Add the remaining crabs, shrimp and sauce and mix well.
  • Toss in the corn.
  • Plate and sprinkle with chopped spring onion on top. Serve and enjoy!
